(1) Equipment cleaning
新設(shè)備使用前,應(yīng)進(jìn)行清洗,否則剛開(kāi)始幾鍋酒會(huì)有苦味及邪雜味。清洗部位包括:蒸煮鍋內(nèi)側(cè)、酒度可調(diào)鍋蓋內(nèi)側(cè)及內(nèi)膽導(dǎo)氣管內(nèi)側(cè)、冷卻器內(nèi)膽。
The new equipment should be cleaned before use, otherwise the first few pots of wine will have bitterness and evil smell. The cleaning parts include: the inner side of the cooking pot, the inner side of the pot cover with adjustable alcohol content, the inner side of the inner air duct and the inner tank of the cooler.
清洗方法:先用清水沖洗后,加清潔劑刷洗一遍,再用清水反復(fù)沖洗。酒度可調(diào)鍋道內(nèi)膽,導(dǎo)氣管內(nèi)側(cè)、冷卻器內(nèi)膽等不能刷洗的地方,用清水多沖洗幾次即可。酒度可調(diào)鍋蓋內(nèi)膽用水管從上,下兩頭反復(fù)沖洗幾次,冷卻器內(nèi)膽用水管伸內(nèi)膽反復(fù)沖洗每個(gè)部位。

設(shè)備每過(guò)半年,一年的時(shí)間,或停產(chǎn)一段時(shí)間再適用,都要按以上要求徹 底清洗一次,每次使用設(shè)備后,蒸煮鍋內(nèi)側(cè)、酒度可調(diào)鍋蓋內(nèi)側(cè)都要清洗后使用。新設(shè)備是經(jīng)過(guò)焊接后再加氧化膜保護(hù)層,并且內(nèi)裝催陳寶,先蒸兩次清水來(lái)清洗。

用耐熱磚(如土燒磚,不能用水泥磚),泥沙砌一個(gè)外方內(nèi)圓的灶。灶的內(nèi)徑比設(shè)備蒸煮鍋小5厘米左右,灶堂高度視燃料而定,以易燃燒、蒸煮鍋內(nèi)受熱快、受熱面大、受熱均勻?yàn)樵瓌t,否則會(huì)延長(zhǎng)蒸餾時(shí)間,灶內(nèi)應(yīng)有兩層,以爐條間隔上層投放燃料,下層通風(fēng),漏渣。煤為燃料,要配備小型鼓風(fēng)機(jī)。

蒸煮鍋內(nèi)置于灶上,入灶內(nèi)3-6厘米,鍋內(nèi)四周與灶之間密封。在蒸煮鍋上安裝酒糟排放管,管外端安裝水閥(開(kāi)關(guān))。蒸煮鍋一定要放平,否則水槽內(nèi)的水深淺不一而起不到密封作用,蒸煮鍋之上放酒度可調(diào)鍋蓋,鍋蓋之上連接導(dǎo)氣管,導(dǎo)氣管的另一端連接冷卻器,冷卻器下面是承受物(鐵架、磚墩等),冷卻器出酒口下面是承受物。
